My friend, Amy makes these amazing cookies...they are more like a muffin or cake than a cookie. I got the recipe a few years ago and have made them every year around this time. The second the weather starts cooling down and the days get shorter, I start craving their pumpkin/chocolaty goodness. They are oh-so-good and quite addictive. The recipe calls for apple sauce instead of butter or oil so it makes it a bit healthier. These are the cookies are perfect with a nice vanilla latte or apple cider:
Amy's Favorite Pumpkin Chocolate Chip Cookies
1 c. firmly packed brown sugar
3 T. honey
1 15oz can of pumpkin
2/3-3/4 c. apple sauce
2 t. vanilla
3 c. flour
1 1/2 t. baking power
1 1/2 t. baking soda
1 1/2 t. pumpkin spice
1 1/2 c. chocolate chips
Place brown sugar, honey, pumpkin, apple sauce and vanilla in a mixing bowl and beat until blended. In a separate bowl, stir together flour, baking powder, baking soda, and spices. Add the dry ingredients to the pumpkin mixture...mix well. Stir in the chocolate chips by hand. Drop onto a parchment paper covered cookie sheet. Bake at 350 degrees for 12-15 minutes. Let cool for a few minutes then transfer to a wire rack.
